Our Secretary emails all the board members the draft of the Board Meeting Minutes within 3 days of the meeting.
Do we have to wait until the next BOD meeting to approve and make them official (sometimes 2 or 3 months between meetings), or if there are no changes requested within 3 days of the email, should the minutes be official?

I see nothing in our documents regarding this.

Approval of the Minutes requires a formal board votes. Florida statutes require this be done at an open meeting.

I have just searched Florida Statute Chapter 718 and see no such requirement.
Am I just missing it?

Keep in mind that approving of minutes is considered an association matter.

Applicable info:

Updates to Florida Condominium Association Law: Legal Requirements, Criminal Penalties, and more

Per that article: Members of the board of administration may use e-mail as a means of communication but may not cast a vote on an association matter via e-mail.

FL 718.112 Bylaws.

Scroll down to 5(c) Board of administration meetings. which states:
Members of the board of administration may use e-mail as a means of communication but may not cast a vote on an association matter via e-mail.

I have just searched Florida Statute Chapter 718 and see no such requirement.
From FS 718.112:

(2) REQUIRED PROVISIONS.—The bylaws shall provide for the following and, if they do not do so, shall be deemed to include the following:
.
.
.

(c) Board of administration meetings.— Meetings of the board of administration at which a quorum of the members is present are open to all unit owners. Members of the board of administration may use e-mail as a means of communication but may not cast a vote on an association matter via e-mail. A unit owner may tape record or videotape the meetings. The right to attend such meetings includes the right to speak at such meetings with reference to all designated agenda items.

FWIW: One has to get familiar with the key words to use for searches of statutes.
