Hello everyone. Can anyone tell me what Florida Statutes or any other Florida regulations state about investment of Reserve Funds for an HOA 55+ Community?

Chapter 718 (condo) or 720 (HOA)? It makes a difference.
Also check your governing documents and see if it has a requirement for only investing is government backed investments.
