Any good word processor would work. If you have a PC, you could use Word Pad (on the Accessory menu on Windows), Works, WordPerfect, Word, etc.

Be sure in recording the minutes that you simply have a summary record of the actions taken by the Board - not a verbatim of the discussions.

If you have the capability to produce an Adobe Acrobat file (.pdf) for the final copy, that's all the better for the record. You can lock that kind of file so it cannot be edited. You can also set it up so that you can do word searches on them, which is handy for your records or for posting online.
